Warm-up. Heat a non-stick pan over medium-low, add butter.
Whisk it. Beat eggs, milk/water, salt and pepper until frothy bubbles appear.
Pour & swirl. Tip eggs into the pan, tilting so they coat evenly. Let them set around the edges.
Add feta/tomato if you’re feeling fancy.
Fold & finish. Use a spatula to fold omelette in thirds like a burrito. Slide onto a plate.
